The top of the Albariño wines of the best years, it is kept in stainless steel tanks and is considered the “Pride of Galicia”.
Now that the Albariño wines have undergo a re-evaluation in recent years, they can all be considered more than acceptable, but as in everything, some are particularly exceptional, such as the Vintage Selection of the Añada de Pazo de Señorans.
It is an extraordinary wine which is kept in stainless steel tanks for several years. In this way, the wine is concentrated in intensity, takes on certain nuances and new aromas, but it is not “oaked”: oak is not ideal for the Albariños.
The Vintage Selection of the Añada de Pazo de Señorans is one of the best white wines in Spain.
1. Conserve at the wine-cellar temperature (12 to 14ºC). Never in the refrigerator.
2. In order to cool it, place the wine in an ice bucket filled with ice and water for 10 minutes
3. The ideal temperature for drinking it is from 10 to 12ºC. If it is colder, it will lose its aroma and its intensity on the palate.
4. Serve in white glasses in order to be able to appreciate the colour of the wine.
5. Do not fill the glass too much so that the wine does get warm, especially in the summer.
It is an elegant Albariño wine with a great balance and a broad and excellent body. It boasts a subtle aroma of moderate permanence, with highly diversified and aromatic notes.
It combines very well with raw and grilled molluscs (clams, razor-shells, and cockles) for its body does not hide the true flavour of the molluscs. Also with not very elaborated fish, such as the monkfish, grouper, and hake and also with blue fish: it will highlight the purity of the fish due to the natural elegance of this wine. It goes well with light, mild cheeses, like the Galician Tetilla cheese (conical cheese).

The energy-giving value of the wine depends on its alcoholic level (1 gram of alcohol furnishes 7 kcal) and its sugar content. In the case of this wine, the alcoholic level is 12.5 millilitres of alcohol present in 100 ml of wine.
In addition to water, alcohol, non-fermentable sugars, mineral salts and some vitamins of the B group, it possesses a high concentration of phenolic components (between 0.16 and 0.3 g/l), such as the resveratrol and the quercetin which possess a strong anti-oxidant activity, which helps to reduce the levels of cholesterol, protect the cardio-vascular system, prevent certain types of cancer and delay the ageing process. Therefore, a moderate consumption in healthy adults can have an overall, positive effect on one’s health.
